Wild King Salmon with Paprika and Mustard

Wild King Salmon is officially back in season.  We can now expect a steady supply and daily deliveries of this incredibly tasty and healthy salmon.  Currently our Kings are being individually line-caught and flown in overnight from Yakitat Peninsula in Southeast Alaska. They will be as fresh as they come!!! Rich in flavor, it's hard to recommend anything but extra virgin olive oil and a touch of salt. Although, if you'd like to try something different, this recipe is a must try (works great with our sustainably farmed salmon also).......

Preheat oven to 375 degrees

Sprinkle Salmon with paprika and pepper.

Spread stone-ground mustard on top

Drizzle a little bit of honey over the mustard. This is delicious but you can leave this step out if you are watching your sugar. We love it both ways.

Place a few pieces of our Applewood bacon over the salmon.

Place Salmon in the oven and cook for approximately 20 minutes depending on thickness.
