Keep It Simple for Super Bowl With Our House-Made Sausages

We've covered ribs, but maybe smoking a rack for hours isn't part of your game plan for Super Bowl Sunday.  Enter the humble, yet  deceivingly complex sausage link. Throw it on the grill, pop it in a bun, slather it with mustard and serve it with kraut — dinner is served!

Sausages get a bad rap, most store-bought brands tend to have artificial fillers, preservatives and gluten. They can also be dull and flavorless. At The Organic Butcher, all of our sausages are made in-house with quality meats and spices.  We take great care in crafting recipes with unique flavor profiles that are mouth-wateringly delicious.

We carry a wide variety of sausages, all of which are perfect for hosting hungry football fans. Buy a bunch and toss them on your grill or smoker. It's stress-free entertaining at it's finest.

A few of our varieties include:

Bratwurst
Our Bratwurst is made with local, pasture-raised pork, caraway seeds, white pepper, ground ginger, salt and pepper. For extra oomph, we add St. Pete's Organic Ale to the mix.

Hot Italian
Our Hot Italian is also made with the same heritage pork as our Bratwurst. We add fennel seed, paprika, cayenne, salt pepper, and red wine. Both this and the Mild Italian work well in chili when removed from their casing.

Wild Boar and Bacon
We use lean wild boar shoulder for rich flavor, a little pork belly for melt-in-your-mouth fat, applewood smoked bacon for depth, and mustard, salt and pepper.

Merguez (Spicy Lamb)
If you like spice, this one's for you! Ground lamb, cayenne, paprika, fresh garlic, organic tomato paste, salt and pepper.

Green Sausage
This is possibly our most popular sausage. Ground Pork, loads of organic Rainbow Chard, fresh garlic, shallots, basil, oregano, and extra virgin olive oil. It's a well-balanced meal in a single link!

And because we cannot let our links go naked, The Organic Butcher carries a small, but well-curated, selection of gourmet mustards as well as small-batch barrel-fermented krauts from No.1 Sons. Their kimchis and krauts are crunchy, zesty and full of probiotics. They are also DC-based and use local ingredients.

No Super Bowl is complete without beer. We carry selections from the Samuel Smith Brewery in Yorkshire, England that goes back as far as 1758. All Samuel Smith beers are brewed solely from authentic natural ingredients without any chemical additives, artificial sweeteners, colorings, flavorings or preservatives. Their cider has a light body, clean apple flavor and a gentle apple blossom finish. It's also gluten-free.

As always, call us and we'll be happy to help put together a perfect tailgate menu for you!

Do you prebuilt sausages in water or beer and then throw on the grill?

Picanha is one of the lesser known pieces of beef in the United States. In Brazil and other parts of South America, it is quite prized - and for good reason.  It’s delicious.  The picanha is a sirloin cap (also called rump cover, rump cap or coulotte).  The meat itself is lean with very little inter-muscular fat but it is cut leaving the hardy fat cap on, which allows it to baste in its own delicious fats while cooking.
