Using raw milk from their herd of Jersey cows, the Feete Family makes cheese only when the cows are eating the fresh grasses of open pasture.
With its soft, white rind speckled with beautiful brown spots, the award-winning Appalachian offers a beautiful buttercup-yellow paste and flavors of grass and mushrooms, reminiscent of a Tomme de Savoie. Its texture is both semi-firm and silky, making it an ideal melter.
